Easy and Delicious Coconut Pudding Recipe

Ingredients:
  • 1 cup coconut milk
  • 1 cup milk (or dairy-free milk)
  • 1/4 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla extract (optional)
  • Pinch of salt
Instructions:
  1. Combine coconut milk, regular milk, sugar, and salt in a saucepan. Heat over medium, stirring often.
  2. Mix cornstarch with a little water to form a paste, then add to the saucepan, stirring constantly until thickened (5-7 minutes).
  3. Take off the heat and stir in vanilla extract if you prefer.
  4. Pour into cups, cool to room temperature, then refrigerate until set.
