Easy and Delicious Coconut Pudding Recipe
Ingredients:
- 1 cup coconut milk
- 1 cup milk (or dairy-free milk)
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1/2 tsp vanilla extract (optional)
- Pinch of salt
Instructions:
- Combine coconut milk, regular milk, sugar, and salt in a saucepan. Heat over medium, stirring often.
- Mix cornstarch with a little water to form a paste, then add to the saucepan, stirring constantly until thickened (5-7 minutes).
- Take off the heat and stir in vanilla extract if you prefer.
- Pour into cups, cool to room temperature, then refrigerate until set.
- Garnish with shredded coconut or fruit before serving.
